Tuna Tartare
Makes: 4-6 Servings
Recipe by Estate Chef David Frakes
1 lb Ahi Tuna (very finely diced, 1/8th-inch thick)
2 T Shallots (finely minced)
2 T Chives (finely sliced)
1 ½ T Mayonnaise
1 t Dijon Mustard
1 T Olive Oil
½ t Salt
Small Pinch Black Pepper (Fresh Ground)
¼ t Paprika
1 T Capers (chopped)
1 T Lemon Juice (or Yuzu, if you have it)
Mix all of the ingredients together.
Refrigerate for a half hour before serving.
Serve on Won-ton crisps, or other cracker.
