Ingredients
- 1(14.75 ounce) Cooked Fresh Salmon (or canned)
- 2T Butter
- 1 Med Onion, chopped
- 2/3 C Cracker Crumbs, divided
- 2 Lg Eggs, beaten
- 2T Fresh Parsley, chopped
- 1T Tarragon, chopped
- 1T Chives, chopped fine
- 1t Dry Mustard
- 3T Olive Oil
Instructions
- Drain salmon, reserving ¾ C of the liquid. Flake the meat.
- Melt butter in a large skillet over medium-high heat. Add onion and cook until tender.
- Combine onion with reserved salmon liquid, 1/3 of the cracker crumbs, eggs, parsley, tarragon, chives, mustard, and salmon in a medium bowl. Mix until well blended, then shape into 6 patties. Coat patties in remaining cracker crumbs.
- Heat olive oil in large skillet over medium heat. Cook patties until browned, then carefully turn and brown on the other side. Season with salt & serve immediately.
