Kish Mish Golden Raisin Sauce

Ingredients

2                  T              Olive Oil

8          whole               Cloves

2                ea               Cardamom Pods

1                ea               Cinnamon Stick (broken in half)

1                ea               Star Anise Pod

1  Cup (145g)            Golden Raisins

½ Cup (100g)            Sugar

¼                 t               Cayenne Pepper

1            Med              Lime, juice only

Instructions

  1. In a 1-quart (960ml) saucepan, heat the oil over medium-high heat.
  2. Add the cloves, cardamom, cinnamon, and star anise.
  3. Toast, stirring as the spices release their aroma, about 3 minutes.
  4. Add the raisins and cook, stirring occasionally, until they glisten, about 2 minutes.
  5. Add the sugar, cayenne, lime juice, and 1 cup water.
  6. Reduce the heat to low and cook until the mixture thickens and appears satiny, about 15 minutes.
  7. Retrieve and discard the spices.
  8. Let the mixture cool.
  9. Serve right away, or refrigerate in an airtight container for up to 2 weeks.
  10. Warm in a saucepan over medium heat before serving.
