Sage-Roasted Fingerling Potatoes

Recipe by Lynmar Estate Chef David Frakes

2 1⁄2 lbs Fingerling Potatoes, halved

2 tsp Olive Oil

3⁄4 tsp Kosher Salt

1 tsp Fresh Sage (finely chopped)

1⁄2 tsp Freshly Ground Black Pepper


1. Preheat oven to 375°.

2. Place potatoes on a jelly-roll pan.

3. Drizzle potatoes with oil; sprinkle with salt, sage and pepper. Toss to combine; spread into a single layer on a pan.

4. Bake at 375° for 30 minutes or until lightly browned and tender.
