Tuna Tartare
Serves: 6

Ingredients
1 lb Ahi Tuna (very finely diced, 1/8th-inch thick)
2 tbsp Shallots (finely minced)
2 tbsp Chives (finely sliced)
1 1/2 tbsp Mayonnaise
1 tsp Dijon Mustard
1 tbsp Olive Oil
1/2 tsp Salt
small pinch Black Pepper (Fresh Ground)
1/4 tsp Paprika
1 tbsp Capers (chopped)
1 tbsp Lemon Juice (or Yuzo, if you have it)
Process
Mix all of the ingredients together.
Refrigerate for a half hour before serving.
Serve on Won-ton crisps, or other cracker.
