We are delighted to debut your February release, a trio of wines from the expressive and compelling 2023 vintage. Each bottle reflects a distinct facet of our Estate vineyards and the thoughtful artistry of our winemaking team. From the vibrant, cool-climate energy of La Sereinité Chardonnay to the poised elegance of Anisya’s Blend Pinot Noir, and the youthful intensity of Adam’s Vineyard Pinot Noir, this collection offers a beautifully layered exploration of Lynmar’s terroir and style.
Beyond these selections, this release holds a special secret. We invite you to visit your member profile to customize your shipment and access a true landmark in our winemaking history: Eye of the Quail, Lynmar’s first-ever White Pinot. Gently pressed to preserve purity and nuance, this 2024 vintage reveals the Pinot grape in a remarkably delicate, textural, and quietly complex form. Produced in extremely limited quantities, we are thrilled to offer our Advocates the first opportunity to experience it while our small allocation lasts.

Estate Chef David Frakes has shared the following as it relates to your most recent Lynmar wine releases:
Begin your culinary journey with the bright, cool-climate character of La Sereinité Chardonnay paired with Apricot-Mustard Salmon with Massaged Chard. The citrus-laced, punchy chard salad balances the richness of the glazed salmon, beautifully highlighting the wine’s fresh aromatics and subtle tannin tension.
For a thoughtfully composed vegetarian pairing, enjoy Adam’s Vineyard Pinot Noir alongside Socca with Mushrooms and Lemon Ricotta. Earthy, roasted mushrooms and creamy lemon ricotta accentuate the wine’s opulent fruit character and youthful mid-palate texture, creating a harmonious and satisfying match.
For a truly classic experience, serve Anisya’s Blend Pinot Noir with Beef Bourguignon. This slow-cooked, savory dish offers the depth and substance needed to complement the wine’s elegant structure, textural richness, and deep fruit tones.
As always, Chef David reminds us that the seasoning or sauces of a dish may be modified to balance the wine by adjusting salt, acid, and other reactive ingredients.
