Estate Chef David Frakes has shared the following as it relates to your most recent Lynmar wine releases:

Adam’s Vineyard Chardonnay continues to astound us. As the vineyard matures, the wine’s complexity expands. Chef David’s Delicata Squash Sformato recipe is one of intricacy and full of flavor.

For a perfect winter course, pair Old Vines Chardonnay to Celeriac & Leek Potage. This thick, comforting vegetable soup will bring out the robust nuances of this heritage vine white wine.

Ready for the main course? Chef David pairs AMDG Pinot Noir alongside Beef Filet with Blue Cheese & Olive Crust – just the dish for a special night in.

Summit Block Pinot Noir is another great wine for a hearty meal. Here, Chef David recommends Porcini-Crusted Short Ribs to accompany this full-bodied red wine.

As always, Chef David reminds us that the seasoning or sauces of a dish may be modified to balance to the wine by adjusting salt, acid, and other reactive ingredients.
